No-Bake Cheesecake

You will need the following ingredients:

  • 40 g Alete Kinderkeks
  • 100 g berry crunchy muesli (less sweet)
  • 80 g butter
  • 5 sheets of gelatin
  • 1 vanilla bean
  • 500 g double cream cheese
  • 100 g sour cream
  • 50 g powdered sugar (optional)
  • 100 g white chocolate
  • 120 g whipping cream
  • 80 g raspberry jam with no added sugar
  • 100 g dark chocolate spread
  • 300 g mixed berries

And also the following kitchen utensils:

  • Freezer bags
  • Baking paper
  • Springform pan
  • Bowl
  • Pot

Here's how it works:

  • Place the cookies and granola in a freezer bag and crush them finely.
  • Melt the butter and mix it with the crumbs. Spread the mixture evenly in a springform pan lined with parchment paper, pressing it down firmly. Chill for 1 hour.
  • Soak the gelatin in cold water.
  • Cut the vanilla bean in half lengthwise, scrape out the seeds, and mix well with the cream cheese, sour cream, and powdered sugar in a bowl.
  • Coarsely chop the white chocolate and melt it with 90 g of whipping cream over a hot water bath; set aside.
  • Squeeze out the gelatin and heat briefly in a saucepan until liquid, then fold into the chocolate mixture and stir into the cream cheese mixture.
  • Mix 140 g of the cream cheese mixture with raspberry jam; transfer the remaining cream cheese mixture to another bowl.
  • Spread both creams alternately over the cake base and chill for 2–3 hours.
  • Remove the cake from the pan.
  • Melt the dark chocolate with the remaining cream (30 g) over a double boiler. Coat the cake with it.
  • Sort, wash, and drain the berries. Top the cake with them.

Have fun making it and enjoy!
